Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Cut the eggplant into one-inch cubes and place them in a large bowl.
  3. Drizzle with olive oil, season with salt and pepper, and toss to coat evenly, then spread on a baking sheet.
  4. Roast for 20-25 minutes, flipping halfway through, until tender and browned.
  5. Prepare the glaze by whisking together miso paste, mirin, soy sauce, honey, ginger, and garlic until smooth.
  6. Once roasted, brush the eggplant with the miso glaze and return to the oven for an additional 5-7 minutes.
  7. Garnish with sesame seeds and chopped green onions before serving warm.
