Step-by-Step Instructions
  1. Preheat the oven to 375°F (190°C) and grease a mini muffin pan.
  2. In a large mixing bowl, mash bananas until smooth, then add grated apples, grated carrots, milk, melted butter, egg, and vanilla extract. Mix thoroughly.
  3. In a separate bowl, whisk together whole wheat flour, rolled oats, ground cinnamon, baking powder, baking soda, and salt.
  4. Gently fold the dry ingredients into the wet mixture until just combined.
  5. Spoon the batter into the prepared muffin pan, filling each cup to the edge.
  6. Bake in the preheated oven for 16-20 minutes, or until golden brown and a toothpick comes out clean.
