  • 1 teaspoon Curry Powder garam masala is an alternative
  • 1 teaspoon Thyme fresh thyme is best
  • 1 large Onion or shallots for sweetness
  • 4 medium Roma Tomatoes fresh is ideal
  • 1 large Red Bell Pepper
  • 2 units Scotch Bonnet Peppers omit for less spice
  • 1 tablespoon Tomato Paste fry for richer taste
  • 1 teaspoon Garlic Powder fresh version is great
  • 1 teaspoon Ginger Powder fresh version is great
  • 1 cube Bouillon Cube optional
  • to taste Parsley/Cilantro for garnish

Method
 

Step-by-Step Instructions
  1. Marinate the chicken with salt, black pepper, paprika, curry powder, thyme, and finely chopped onion for at least 30 minutes in the refrigerator.
  2. Sear the marinated chicken in a hot skillet with vegetable oil for 5-7 minutes until browned.
  3. Blend Roma tomatoes, red bell pepper, onion, and scotch bonnet peppers until smooth; pour into a bowl.
  4. In the same skillet, heat oil and fry tomato paste for about 2 minutes until it darkens slightly.
  5. Pour the blended tomato-pepper mixture into the skillet, stir in garlic powder, ginger powder, and bouillon cube, and simmer for 10 minutes.
  6. Simmer the browned chicken in the sauce on medium-low for 25-30 minutes, basting periodically.
  7. Garnish with chopped parsley or cilantro and serve with rice or fried plantains.
