Step-by-Step Instructions
  1. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add diced onion, carrots, and celery; sauté for 5-7 minutes until tender.
  2. Add 1 pound of chicken breasts to the pot and cook for about 5 minutes, turning occasionally until slightly browned.
  3. Stir in minced garlic, grated ginger, and turmeric; sauté for an additional 1-2 minutes.
  4. Pour in chicken broth and coconut milk, stir well, and bring to a gentle simmer. Cook for 15-20 minutes.
  5. Carefully remove the chicken, shred it using two forks, and return it to the pot.
  6. Stir in fresh spinach and cook for another 2-3 minutes until wilted. Squeeze in lemon juice and adjust seasoning.
