- Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper.
- In a large mixing bowl, cream together ½ cup of softened unsalted butter, ½ cup of granulated sugar, and ½ cup of light brown sugar until light and fluffy.
- Add in ¾ cup of creamy peanut butter, 1 large egg, and 1 teaspoon of vanilla extract, and mix until well combined.
- In a separate bowl, whisk together 1 ½ cups of all-purpose flour, 1 teaspoon of baking soda, and a pinch of salt.
- Gradually mix the dry ingredients into the wet ingredients until just combined.
- Roll the dough into 1-inch balls and coat each in granulated sugar before placing them on the baking sheets.
- Bake for 10-12 minutes until the edges are golden and the centers are soft.
- Press a Hershey’s Kiss into the center of each cookie as soon as they are out of the oven.
- Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
