- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine shredded mozzarella, cheddar, and grated Parmesan cheese until well mixed.
- Sprinkle in Italian seasoning and garlic powder, stirring well. Add red pepper flakes if desired.
- Cut the pepperoni slices in half if large, set aside.
- Arrange the pepperoni slices in a single layer on the baking sheet.
- Sprinkle the cheese mixture generously over each pepperoni slice.
- Bake for 8-10 minutes until the cheese is melted and lightly golden.
- Remove from oven, cool briefly, then transfer to a wire rack to cool completely.
