  1. Butterfly the chicken breasts and pound them to 1/4 inch thickness.
  2. Pulse the salted pretzels into crumbs, then mix in paprika, salt, and pepper.
  3. Beat the eggs in a shallow dish. Heat vegetable oil in a skillet.
  4. Dip the chicken in the eggs, then coat with pretzel mixture.
  5. Fry the chicken for 3-4 minutes per side until golden brown.
  6. Melt butter in a saucepan, whisk in flour to form a roux.
  7. Gradually whisk in milk and add cheese and mustard, stirring until smooth.
