- Dice the English cucumbers into small, uniform pieces and place in a colander. Sprinkle generously with salt and let sit for at least 15 minutes to draw out excess moisture.
- In a large mixing bowl, combine yogurt, crumbled feta cheese, chopped fresh herbs, lemon zest, lemon juice, and black pepper. Stir until creamy and well combined.
- After 15 minutes, drain the cucumbers and pat them dry with a paper towel.
- Add the dried cucumbers to the yogurt and feta mixture, gently folding everything together.
- Assemble the sandwiches by layering sprouts on toasted bread, spreading the cucumber filling over the sprouts, and topping with onion slices if desired. Place a second slice of bread on top.
- Cut each sandwich in half and serve immediately for the best texture.
