Preparation Steps

  2. In a large mixing bowl, combine yogurt, crumbled feta cheese, chopped fresh herbs, lemon zest, lemon juice, and black pepper. Stir until creamy and well combined.
  3. After 15 minutes, drain the cucumbers and pat them dry with a paper towel.
  4. Add the dried cucumbers to the yogurt and feta mixture, gently folding everything together.
  5. Assemble the sandwiches by layering sprouts on toasted bread, spreading the cucumber filling over the sprouts, and topping with onion slices if desired. Place a second slice of bread on top.
  6. Cut each sandwich in half and serve immediately for the best texture.
