Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease four small ramekin dishes with butter or olive oil.
  2. In a medium skillet, heat 1 tablespoon of olive oil over medium heat and sauté the spinach for about 1 minute until wilted.
  3. In a medium bowl, combine 1 cup of ricotta cheese with the remaining olive oil and thyme, whisking until smooth.
  4. Divide the ricotta mixture over the sautéed spinach in the ramekins, then pour 2 tablespoons of heavy cream into each.
