Preparation Steps
  1. Season the pork or chicken cutlets with salt and pepper. Set up a breading station with flour, beaten egg, and panko breadcrumbs.
  2. Heat oil in a frying pan over medium-high heat until it reaches 350°F (175°C). Fry the cutlets for 4-5 minutes on each side until golden brown.
  3. Mix soy sauce, ketchup, mirin or rice vinegar, and Worcestershire sauce in a bowl to make the tonkatsu sauce.
  4. Serve the dish by placing steamed rice in a bowl, slicing the cutlet over it, and drizzling the sauce on top.
  5. Optional: Garnish with sliced green onions or sesame seeds before serving.
