  • 1 ball Fresh mozzarella Thinly sliced; burrata can be used as a substitute.
For the Colorful Toppings
  • 1 cup Assorted marinated vegetables Include banana peppers, peppadew peppers, green and black olives.
  • 1/2 cup Fresh basil Chopped; can substitute with parsley or skip.
For Finishing Touches
  • 1/4 cup Shredded Parmesan cheese Optional; Grana Padano works well too.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (204°C).
  2. Line a half sheet pan with foil or parchment paper. Spread a layer of Parmesan garlic pita chips across the pan.
  3. Sprinkle the shredded Italian cheese blend over the pita chips and bake for 6-7 minutes until melted.
  4. Dollop the leftover spaghetti sauce over the melted cheese, then add thinly sliced fresh mozzarella and assorted marinated vegetables.
  5. Return to the oven for an additional 6 minutes and broil for 2-3 minutes for a golden top.
  6. Sprinkle fresh chopped basil and optional shredded Parmesan cheese before serving.
