Ingredients
  

For the Beef Sauce
  • 1 pound ground beef can substitute with ground turkey or chicken
  • 2 tablespoons gochujang can use a mix of sriracha and miso in a pinch
  • 2 tablespoons soy sauce low-sodium option available
  • 1 tablespoon rice vinegar can use apple cider vinegar
  • 1 tablespoon brown sugar or honey/agave syrup
  • 1 tablespoon sesame oil can substitute with vegetable oil
  • 3 cloves garlic minced
  • 1 tablespoon ginger grated
For the Base
  • 2 cups short-grain white rice or jasmine/brown rice
For Toppings
  • 1 cup carrots shredded
  • 1 cup cucumbers sliced
  • 1 cup kimchi or pickled vegetables as a substitute
  • 2 stalks green onions thinly sliced
  • 2 tablespoons toasted sesame seeds black sesame seeds can be used

Method
 

Cooking Instructions
  1. Heat 1 tablespoon of sesame oil in a large skillet over medium-high heat until it shimmers, about 1-2 minutes.
  2. Add 1 pound of ground beef to the skillet, breaking it up. Cook for about 5 minutes until browned and slightly crispy.
  3. Stir in 3 cloves of minced garlic and 1 tablespoon of grated ginger. Sauté for 1 additional minute.
  4. Mix in 2 tablespoons of gochujang, 2 tablespoons of soy sauce, 1 tablespoon of rice vinegar, and 1 tablespoon of brown sugar. Let it bubble for 2-3 minutes.
  5. Prepare 2 cups of rice according to package instructions until fluffy.
  6. Divide the cooked rice among bowls and top with the spicy beef mixture, carrots, cucumbers, and kimchi.
  7. Garnish with sliced green onions and sesame seeds before serving.
