- In a bowl, combine chicken thighs or breasts with cumin, olive oil, and seasonings. Cover and marinate in the refrigerator for at least 30 minutes.
- Preheat grill or oven to 375°F (190°C). Cook marinated chicken for 25-30 minutes until internal temperature reaches 165°F (74°C).
- In a medium saucepan, heat olive oil and stir in rice, turmeric, cumin. Add chicken stock, bring to a boil, then simmer covered for 15 minutes.
- Stir in frozen peas, cover and steam for another 5-10 minutes. Fluff rice with a fork when done.
- In a blender, combine cilantro, jalapeño, garlic, lime juice, and olive oil. Blend until smooth.
- Serve rice on a plate with grilled chicken on top and drizzle with green sauce. Garnish with extra cilantro.
