- Preheat your broiler on low. Slice the baguette into ½ inch thick pieces and arrange on a baking sheet. Broil for 3-5 minutes until golden brown, flip and broil other side for 2-3 minutes.
- In a skillet, heat olive oil over medium heat. Add minced shrimp, chopped onion, and diced celery. Cook for about 1 minute until shrimp turns pink.
- Add minced garlic, Cajun seasoning, and black pepper to the shrimp mixture. Cook for 1 more minute.
- Reduce heat and stir in cream cheese, Parmesan, and Fontina until melted and combined, about 2-3 minutes.
- Spoon the creamy shrimp mixture onto each toasted baguette slice, topping with kosher salt, black pepper, and crushed red pepper if desired.
- Preheat the oven to 400°F. Bake assembled toasts for about 10 minutes until golden brown and bubbly.
- Garnish with thinly sliced green onions before serving hot.
