For the Shrimp Mixture
  • 1 lb Shrimp Peeled, deveined, and minced; wild-caught is preferred.
  • ½ small Onion Can be substituted with shallots for a milder flavor.
  • 1 stalk Celery Provides crunch and freshness; omit if unavailable.
  • 3 cloves Garlic Essential for aroma; garlic powder may be used.
  • ¼-½ teaspoon Cajun Seasoning Adjust to taste or replace with Old Bay.
  • ¼ teaspoon Fresh Cracked Black Pepper Enhances flavor; can be omitted.
For the Creamy Base
  • 4 oz Cream Cheese Use room temperature for easier mixing.
  • ¼ cup Shaved Parmesan Cheese Can swap for Pecorino Romano or nutritional yeast.
  • ¼ cup Shaved Fontina Cheese Gruyère or Havarti can be used instead.
  • Kosher Salt and Fresh Ground Black Pepper Season to taste.
  • ¼ teaspoon Crushed Red Pepper Omit for milder bites.
For the Garnish
  • 1 Green Onion Thinly sliced; use parsley or cilantro as substitutes.

Method
 

Instructions
  1. Preheat your broiler on low. Slice the baguette into ½ inch thick pieces and arrange on a baking sheet. Broil for 3-5 minutes until golden brown, flip and broil other side for 2-3 minutes.
  2. In a skillet, heat olive oil over medium heat. Add minced shrimp, chopped onion, and diced celery. Cook for about 1 minute until shrimp turns pink.
  3. Add minced garlic, Cajun seasoning, and black pepper to the shrimp mixture. Cook for 1 more minute.
  4. Reduce heat and stir in cream cheese, Parmesan, and Fontina until melted and combined, about 2-3 minutes.
  5. Spoon the creamy shrimp mixture onto each toasted baguette slice, topping with kosher salt, black pepper, and crushed red pepper if desired.
  6. Preheat the oven to 400°F. Bake assembled toasts for about 10 minutes until golden brown and bubbly.
  7. Garnish with thinly sliced green onions before serving hot.
