- In a large bowl, combine ground chicken, shredded onion, gluten-free bread crumbs, garlic powder, onion powder, salt, pepper, and liquid smoke. Mix gently.
- Divide the mixture into equal portions and shape into burger patties, about ¾-inch thick, with an indentation in the center.
- If preparing ahead, place patties on a parchment-lined baking sheet and freeze for 20 minutes.
- Preheat the grill to medium-high at around 400°F (204°C). Grill patties for about 12 minutes, flipping halfway.
- Remove the patties from the grill and rest for a few minutes. Assemble with lettuce, dressing, and Parmesan.
