For the Chicken
  • 1 lb Boneless Skinless Chicken Breasts Thighs can add extra juiciness.
  • 1 cup Chicken Broth Can swap for gluten-free broth.
  • 2 tbsp Olive Oil Extra virgin preferred.

  • to taste Black Pepper
For the Vegetables
  • 1 medium Yellow Onion Thinly sliced.
  • 3 cloves Garlic Minced.
  • 2 medium Tomatoes Fresh, diced.
  • 1 medium Cucumber Sliced.
  • 1 medium Red Onion Sliced.
For the Tzatziki Sauce
  • 1 cup Greek Yogurt
  • 1 medium Cucumber Grated and squeezed.
  • 1 tbsp Fresh Dill Can be switched out with mint.
  • 1 clove Garlic Minced, use sparingly.
For Assembly
  • 4 Pita Bread Serve warmed.

Method
 

Step-by-Step Instructions
  1. Layer thinly sliced yellow onions at the bottom of your slow cooker.
  2. Mix together minced garlic, chicken broth, olive oil, dried oregano, ground paprika, salt, and black pepper in a bowl.
  3. Place chicken breasts on top of the onions and pour the marinade over them.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Remove chicken and shred it into bite-sized pieces, mixing with the onions and juices.
  6. Warm pita bread and fill with shredded chicken, tzatziki sauce, diced tomatoes, cucumber slices, and red onion rings.
