Step-by-Step Instructions
  1. In a medium bowl, whisk together olive oil, oregano, garlic powder, salt, and pepper. Add chicken thighs, ensuring they are coated, cover and refrigerate for at least 30 minutes, preferably overnight.
  2. Heat skillet over medium-high heat. Add marinated chicken thighs, cooking for 5-7 minutes on each side until golden brown and cooked to an internal temperature of 165°F (75°C). Remove from heat and let rest.
  3. In a separate bowl, combine Greek yogurt, crumbled feta, lemon juice, minced garlic, salt, and pepper. Mix until smooth and season to taste, setting aside to let flavors meld.
  4. Slice cooked chicken into strips. Warm pita bread briefly until soft. Spread tzatziki on each pita, add sliced chicken, and top with cherry tomatoes, cucumbers, and red onion.
  5. Roll up each pita tightly, securing with a toothpick or parchment paper. Serve warm and enjoy!
