  • 1.25 tablespoons pesto store-bought or homemade
  • 8 slices fresh mozzarella can substitute with provolone or cheddar
  • 2 slices Roma tomatoes can substitute with cherry tomatoes or roasted red peppers

Step‑by‑Step Instructions
  1. Begin by slicing two boneless chicken breasts horizontally to create four cutlets. Season with Italian seasoning, salt, and black pepper. Let rest.
  2. Heat 2 tablespoons of avocado oil in a medium skillet over medium-high heat. Sear chicken cutlets for 3-5 minutes per side until golden brown and cooked to 160°F.
  3. Cut the ciabatta rolls in half and toast the cut sides in the skillet until golden, about 1-2 minutes.
  4. Spread 1 tablespoon of mayonnaise on the bottom half of each roll. Spread 1 ¼ tablespoons of pesto on the top half. Layer with chicken, mozzarella, and tomatoes.
  5. Brush the tops of the sandwiches with avocado oil and grill in the skillet over medium heat for 2 minutes per side until the cheese melts and the bread is crispy.
