  • 2 pieces Chicken Breasts can substitute with turkey or tofu
  • 2 medium Zucchini use fresh zucchini
  • 1 cup Cherry Tomatoes halved
  • 1 medium Red Onion thinly sliced
  • 3 cloves Garlic minced
  • 2 tablespoons Olive Oil
  • 1 teaspoon Dried Oregano or fresh oregano if available
  • 1 teaspoon Dried Basil or fresh basil
  • 1 teaspoon Smoked Paprika optional
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper freshly ground
  • 1/2 teaspoon Red Pepper Flakes optional
  • 1 cup Mozzarella Cheese can substitute with feta
  • 1/2 cup Parmesan Cheese
  • 1/4 cup Fresh Parsley for garnish

Method
 

Cooking Steps
  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease a 9x13-inch baking dish with olive oil.
  3. In a large mixing bowl, combine the chicken breasts, sliced zucchini, halved cherry tomatoes, thinly sliced red onion, and minced garlic. Drizzle with olive oil and add all herbs and seasonings. Toss until well coated.
  4. Spread the chicken and vegetable mixture evenly in the prepared baking dish.
  5. Generously sprinkle mozzarella and Parmesan cheese on top.
  6. Cover the baking dish with aluminum foil and bake for 20 minutes.
  7. After 20 minutes, carefully remove the foil and continue baking for an additional 10-15 minutes until the cheese is bubbly and golden brown.
  8. Garnish with chopped fresh parsley and serve.
