- Preheat your oven to 350°F (180°C). In a food processor, blend 1.5 cups of drained chickpeas, chopped red onion, minced garlic, nutritional yeast, soy sauce, and tomato paste until smooth.
- Add smoked paprika, coriander powder, and cumin to the chickpea mixture and mix until well combined.
- Transfer the chickpea mixture to a large mixing bowl. Gradually fold in breadcrumbs and chopped parsley until fully incorporated.
- Take tablespoon-sized portions of the mixture and roll into balls using your hands. Place them on a parchment-lined baking tray.
- Freeze the tray for about 15 minutes to help firm up the meatballs.
- After chilling, brush meatballs lightly with olive oil if desired and bake for 20 minutes, turning halfway through.
