  • 2 cloves Garlic minced
  • 2 tablespoons Nutritional Yeast Flakes
  • 2 tablespoons Soy Sauce or tamari for gluten-free
  • 2 tablespoons Tomato Paste
  • 1 teaspoon Smoked Paprika use less for a subtler flavor
  • 1 teaspoon Coriander Powder
  • 1 teaspoon Cumin optional
  • 1 cup Breadcrumbs or oats for gluten-free
  • 1/4 cup Chopped Parsley or basil/cilantro
  • 1 tablespoon Olive Oil for brushing before baking

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (180°C). In a food processor, blend 1.5 cups of drained chickpeas, chopped red onion, minced garlic, nutritional yeast, soy sauce, and tomato paste until smooth.
  2. Add smoked paprika, coriander powder, and cumin to the chickpea mixture and mix until well combined.
  3. Transfer the chickpea mixture to a large mixing bowl. Gradually fold in breadcrumbs and chopped parsley until fully incorporated.
  4. Take tablespoon-sized portions of the mixture and roll into balls using your hands. Place them on a parchment-lined baking tray.
  5. Freeze the tray for about 15 minutes to help firm up the meatballs.
  6. After chilling, brush meatballs lightly with olive oil if desired and bake for 20 minutes, turning halfway through.
