Ingredients

For the Dough
  • 4 cups All-Purpose Flour Can substitute with bread flour for a chewier texture.
  • 2 teaspoons Salt Kosher or sea salt works well too.
  • 2 teaspoons Instant Yeast Activate in warm water if using active dry yeast.
  • 1/4 cup Olive Oil Can be substituted with vegetable oil if necessary.
  • 1.5 cups Warm Water Ensure it's about 110°F for perfect yeast activation.
For the Topping
  • 4 cloves Minced Garlic Avoid browning to keep the taste bright.
  • 1 cup Grated Parmesan Cheese Feel free to substitute with another hard cheese.
  • 1 teaspoon Flaky Sea Salt Kosher salt is a suitable alternative.
  • 1 tablespoon Fresh Rosemary or Thyme Optional; enhances the flavor.
  • 1/4 cup Fresh Parsley or Herbs Optional but recommended for a burst of color.

Equipment

  • mixing bowl
  • baking dish
  • small saucepan
  • whisk
  • sharp knife

Method

Step‑by‑Step Instructions
  1. In a large mixing bowl, combine all-purpose flour, salt, and instant yeast, stirring to blend the dry ingredients. Add olive oil and warm water, mixing until a sticky dough forms. Knead the dough, cover, and let rise for 1-2 hours until doubled.
  2. Prepare a 9x13 inch baking dish by greasing it with olive oil. Gently deflate the risen dough and transfer it into the dish. Stretch it to the edges of the pan, cover again, and let rest for an additional 30 minutes.
  3. Heat 1/4 cup of olive oil in a small saucepan over medium-low heat. Add minced garlic and a pinch of salt, cooking until fragrant, about 2-3 minutes. Remove from heat and set aside.
  4. Press deep dimples in the risen dough using your fingers. Drizzle the garlic oil over the top, sprinkle grated parmesan cheese and optional fresh herbs, and flaky sea salt.
  5. Preheat oven to 425°F (220°C). Bake the focaccia for 20-25 minutes until golden brown and crispy.
  6. Remove from the oven and let cool in the pan for about 10 minutes. Cut into squares or strips and serve warm.
