  • 1 cup Plain Greek Yogurt Can substitute with full-fat sour cream
  • 1 cup Shredded Cheddar Cheese Monterey Jack or Pepper Jack can also be used

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In your preheated skillet, add olive oil over medium heat. Warm for about a minute before adding green onions, chili powder, ground cumin, garlic powder, and dried oregano. Sauté for 2 minutes until onions soften and spices become fragrant.
  3. Add shredded chicken, cooked brown rice, canned diced green chiles, fire-roasted tomatoes, and frozen corn. Mix gently until combined and heated through for about 3-4 minutes.
  4. Remove from heat and stir in Greek yogurt until well integrated.
  5. Sprinkle shredded cheddar cheese over the casserole and bake for 15 minutes until cheese is melted and bubbling.
  6. Let it cool slightly before serving, optionally garnished with diced tomatoes and chopped cilantro.
