- In a large mixing bowl, combine the ground lamb, ground beef, finely chopped onion, minced garlic, and breadcrumbs.
- Sprinkle in the dried oregano, ground cumin, kosher salt, Aleppo pepper, and black pepper. Mix thoroughly until well combined.
- Form the meat mixture into a loaf shape, compacting it firmly. Preheat oven to 375°F (190°C) while shaping.
- Line a baking dish with parchment paper and place the loaf in the center. Bake for 25–30 minutes until internal temperature reaches 160°F (70°C).
- Let the meat loaf cool for 5-10 minutes. Slice thinly to mimic traditional gyro style.
- Warm pita bread on a hot skillet for 1–2 minutes on each side or in the oven.
- Fill warm pita with sliced gyro meat, tzatziki sauce, tomato slices, red onion, and chopped romaine.
- If desired, sprinkle feta cheese and add hot sauce. Repeat assembly with remaining ingredients.
