- Preheat your oven to 400°F (200°C) and line a rimmed baking sheet with parchment paper.
- Cut white cheddar cheese into 30 equal cubes and set aside 30 whole cranberries from your sauce.
- Slice the smoked sausage into ½-inch thick pieces and arrange them in a single layer on the baking sheet.
- Bake for 15–20 minutes until the sausage starts to brown nicely at the edges.
- Remove from the oven and top each sausage piece with a cube of white cheddar cheese and a whole cranberry.
- Skewer each sausage piece to secure the cheese and cranberry on top, then serve on a platter.
- Sprinkle freshly snipped parsley over the bites and serve immediately with remaining cranberry sauce.
