  • 1 can Cannellini Beans
  • 1 can Kidney Beans
  • 1 can Diced Tomatoes or fresh when in season
  • 2 cups Kale or Spinach chopped
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons Olive Oil or neutral oil
  • Grated Parmesan Cheese optional garnish
  • Crusty Bread for serving

Step-by-Step Instructions
  1. Heat olive oil in a large pot over medium-high heat. Brown the sliced Italian sausage, about 7-10 minutes, then set aside, leaving drippings.
  2. Add chopped onion, diced carrots, and celery to the pot. Sauté for 5-7 minutes until softened.
  3. Stir in minced garlic, dried oregano, dried thyme, and red pepper flakes. Cook for an additional minute.
  4. Pour in chicken broth, add browned sausage, cannellini beans, kidney beans, and diced tomatoes. Bring to a boil, then simmer on low heat.
  5. Let the soup simmer for at least 30 minutes, stirring occasionally, for flavors to meld.
  6. Stir in chopped kale or spinach, cooking for 2-3 minutes until wilted.
  7. Season with salt and pepper to taste before serving.
  8. Ladle soup into bowls, garnish with Parmesan cheese if desired, and serve with crusty bread.
