Ingredients
  

For the Casserole
  • 5-6 medium sweet potatoes peeled and sliced into thin medallions
  • 1/4 cup unsalted butter can substitute with salted butter, reduce added salt
  • 1 cup brown sugar light or dark based on preference
  • 1/2 cup water for smooth sauce consistency
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
For the Topping
  • 1 cup chopped pecans or walnuts
  • 2 cups mini marshmallows add more for extra sweetness

  • Mandoline slicer

Method
 

Casserole Preparation
  1. Preheat Your Oven to 400°F (204°C).
  2. Peel and slice the sweet potatoes into thin medallions using a mandoline slicer.
  3. In a medium saucepan over medium heat, melt 1/4 cup of unsalted butter. Stir in brown sugar, water, and spices. Cook until bubbly, about 5-7 minutes.
  4. Layer half of the sweet potato medallions in your greased dish, brush with 3/4 of the sauce, and repeat with remaining potatoes and sauce.
  5. Cover with foil and bake for 45-50 minutes until tender.
  6. Remove foil, drizzle remaining sauce, and top with pecans and marshmallows.
  7. Broil for 1-2 minutes until marshmallows are golden brown.
  8. Allow to cool for 10-15 minutes before serving.

Notes
