  • 2 large Eggs
  • 1 cup Almond Flour do not substitute with coconut flour without adjusting
  • 1 cup Shredded Mozzarella or dairy-free alternative
  • 1 tbsp Baking Powder
  • 1 tsp Salt
  • 1 tsp Garlic Powder
Optional Topping
  • to taste Everything Bagel Seasoning

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and prepare a greased baking sheet lined with parchment paper.
  2. In a mixing bowl, combine grated zucchini, eggs, almond flour, shredded mozzarella, baking powder, salt, and garlic powder. Mix until a thick dough forms.
  3. Shape the dough into bagels using your hands or a silicone bagel mold and place them on the prepared baking sheet.
  4. Sprinkle with Everything Bagel seasoning if desired.
  5. Bake for 20-25 minutes until golden brown and firm to the touch.
  6. Allow to cool for 5 minutes before transferring to a wire rack.
