Method
Prepare the Dough
- Activate the yeast in ¼ cup of warm water mixed with 1 tablespoon of brown sugar. Let it sit for 5-10 minutes or until frothy.
- Combine 1 ¼ cups of almond milk, 6 tablespoons of melted and cooled butter, 2 large eggs, and 2 teaspoons of vanilla extract in a separate bowl. Blend this mixture with the activated yeast to craft a rich dough.
Combine the Dry Ingredients
- In a large mixing bowl, whisk together 3 cups of all-purpose flour, 2 ½ cups of artisan bread flour, and ½ cup of brown sugar. Gradually pour in the wet ingredients and stir until a shaggy dough forms.
- Transfer the dough to a floured surface and knead for about 5-10 minutes until smooth and elastic.
First Rise
- Place the kneaded dough into a greased bowl, cover with a clean kitchen towel, and let it rise in a warm area for approximately 1 hour or until doubled.
Sauté the Peaches
- Melt 2 tablespoons of salted butter in a skillet over medium heat.
- Add 2 cups of diced peaches, ½ cup of brown sugar, and 1 teaspoon of vanilla extract and sauté for about 5-7 minutes until tender and caramelized.
- Allow this mixture to cool completely before using.
Make the Crumble Topping
- In a small bowl, combine 1 ¼ cups of all-purpose flour with ½ cup of brown sugar and 5 tablespoons of partially melted salted butter. Mix until crumbly.
Assemble the Rolls
- On a floured surface, roll out the dough into a large rectangle.
- Spread ½ cup of softened butter on top, followed by the prepared peach filling and a layer of peach preserves. Sprinkle the crumble topping evenly on top.
Roll and Cut
- Starting from one long edge, tightly roll the dough into a cylinder. Pinch the seams to seal and cut into 1.5-inch pieces.
- Place the cut rolls into a parchment-lined baking dish.
Second Rise
- Cover the arranged rolls with plastic wrap and let them rise for another 20 minutes.
Bake the Rolls
- Once the oven is ready, pour heavy cream over the rolls and sprinkle the crumble topping liberally. Bake for 35-40 minutes until golden brown.
Create the Glaze
- Beat 4 ounces of softened cream cheese until smooth. Gradually mix in 2 cups of sifted powdered sugar and enough almond milk to reach desired consistency.
Glaze and Serve
- Drizzle the cream cheese glaze generously over the rolls. Serve warm.

Notes
Perfectly warm almond milk helps the dough rise beautifully. Use dental floss to cut rolls, and watch for visual cues during rising.
