For the Cake
  • 3 cups apples Granny Smith or Honeycrisp recommended
  • 2 cups all-purpose flour Gluten-free flour blend as an alternative
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon Add more for a spicier note
  • 1/2 teaspoon cardamom Optional but recommended
  • 1/2 cup unsalted butter Melted and cooled
  • 1 cup granulated sugar
  • 3 large eggs Room temperature
  • 1 teaspoon vanilla extract Use pure for best taste
  • 1 cup plain yogurt or sour cream Greek yogurt can be used
For the Topping
  • 1/4 cup granulated sugar
  • 1 teaspoon cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease and line a baking pan with parchment paper.
  2. Peel, core, and thinly slice your apples, tossing them with lemon juice to prevent browning.
  3. In a mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and cardamom.
  4. In another bowl, combine the melted butter, sugar, eggs, vanilla, and yogurt and mix until smooth.
  5. Gradually add the dry mix to the wet ingredients, stirring gently until just combined.
  6. Spread half of the batter into the prepared pan and layer half the apple slices on top.
  7. Add dollops of remaining batter and layer the rest of the apple slices on top.
  8. Mix the topping sugar and cinnamon, then sprinkle over the apple slices.
  9. Bake for 40–45 minutes until the top is golden and a toothpick comes out clean.
  10. Let the cake cool in the pan for 10–15 minutes before transferring to a wire rack.
