  • 2 cups All-Purpose Flour or gluten-free 1:1 baking flour
  • 2 large Eggs or flax eggs for vegan option
  • 1 teaspoon Baking Powder
For the Filling
  • 1 cup Dried Cherries can swap for dried cranberries or apricots
  • 1 cup White Chocolate Chips or dark chocolate chips for richness
For the Crumble Topping
  • 1 cup Oats adjust for personal preferences
  • 1/2 cup Brown Sugar or less/coconut sugar for lower sweetness

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  2. In a large mixing bowl, cream together unsalted butter and granulated sugar until light and fluffy.
  3. Add eggs and mix until fully integrated and creamy.
  4. Sift in all-purpose flour and baking powder, mixing until just combined.
  5. Fold in dried cherries and white chocolate chips until evenly distributed.
  6. Spread the thick batter evenly into the prepared baking dish.
  7. Combine oats and brown sugar for crumble topping and sprinkle it over the batter.
  8. Bake in the preheated oven for 25-30 minutes, until the edges are golden brown.
  9. Allow to cool in the baking dish on a wire rack for at least 30 minutes before slicing.
