  • 2 large Sweet Potatoes Roasted until tender.
  • 2 tablespoons Olive Oil For roasting.
  • to taste Salt
  • to taste Pepper
For the Toppings
  • 8 ounces Brie Cheese Creamy and melts well.
  • 1 cup Dried Cranberries For sweetness.
  • 1/2 cup Pecans Toasted for flavor.
Optional Garnish
  • to taste Fresh Herbs (Rosemary or Thyme) For added flavor.

Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and peel the sweet potatoes, slice them into ¼-inch rounds, and arrange them in a single layer on the baking sheet.
  3. Drizzle with olive oil, season with salt and pepper, and roast for 20-25 minutes, flipping halfway, until golden.
  4. Add slices of brie cheese on top of each round and return to the oven for another 5 minutes until melted.
  5. Remove from the oven, top with cranberries and pecans, and garnish with herbs if desired. Serve warm.
