- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Wash and peel the sweet potatoes, slice them into ¼-inch rounds, and arrange them in a single layer on the baking sheet.
- Drizzle with olive oil, season with salt and pepper, and roast for 20-25 minutes, flipping halfway, until golden.
- Add slices of brie cheese on top of each round and return to the oven for another 5 minutes until melted.
- Remove from the oven, top with cranberries and pecans, and garnish with herbs if desired. Serve warm.
