Macaron Shells
  • 1 cup Domino® Golden Sugar
  • 1 tbsp Egg White Powder Optional for stabilizing meringue
  • 4 large Egg Whites Aged or room temperature
  • 1 cup Almond Flour Finely ground sunflower seeds can be a nut-free alternative
  • 1 cup Domino® Powdered Sugar Sift to avoid clumps
  • 1 tbsp Meringue Powder Can be omitted if not available
  • 1 tsp Black & Yellow Gel Food Coloring Use gel-based for vibrancy
Buttercream Filling
  • 1 cup All-purpose Flour Must be heat-treated for safety
  • 1 cup Unsalted Butter Should be softened
  • 1 tbsp Vanilla Extract Almond extract can deepen complexity
Decoration
  • 1 cup Desiccated Coconut Omit for plain sides if desired

Method
 

Preparation Steps
  1. Gather and measure all the ingredients, ensuring egg whites are at room temperature. Preheat the oven to 300°F.
  2. Sift almond flour and powdered sugar together in a large mixing bowl.
  3. In a separate bowl, melt golden sugar and egg white powder over simmering water. Whip egg whites to stiff peaks.
  4. Fold the sifted dry ingredients into the whipped egg whites until combined, then add gel food coloring gradually.
  5. Pipe small circles of batter onto parchment-lined baking sheets; let rest for 30-60 minutes.
  6. Bake the macarons in the preheated oven for 15-20 minutes until they form a 'foot'.
  7. Cool the macaron shells on baking sheets completely.
  8. Prepare royal icing by mixing powdered sugar and meringue powder with water until glossy.
  9. Decorate the shells with royal icing to resemble Santa's belt.
  10. Make the buttercream by creaming softened butter and golden sugar, then add vanilla and cooled flour.
  11. Assemble the macarons by piping buttercream on one shell and topping with another. Roll in desiccated coconut if desired.
