Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C) and lightly grease a 9x13 inch baking dish with olive oil or cooking spray.
  2. In a sauté pan, heat 1 tablespoon of olive oil over medium-high heat, then add diced onion and minced garlic. Sauté for about 3 minutes until onion is translucent.
  3. Add ground turkey to the pan and cook for about 10 minutes, breaking it apart until evenly browned.
  4. Wash large bell peppers and slice each in half lengthwise, removing seeds. Arrange in the greased baking dish, cut side up.
  5. Once turkey is browned, reduce heat and stir in canned tomato sauce, taco seasoning, black beans, frozen corn, and cooked rice. Mix well and simmer for 2-3 minutes.
  6. Spoon about ¾ cup of the turkey filling into each bell pepper half and sprinkle cheddar cheese on top.
  7. Place the baking dish in the preheated oven and bake uncovered for 15-20 minutes until cheese is melted.
