- Preheat your oven to 350°F (175°C) and lightly grease a 9x13 inch baking dish with olive oil or cooking spray.
- In a sauté pan, heat 1 tablespoon of olive oil over medium-high heat, then add diced onion and minced garlic. Sauté for about 3 minutes until onion is translucent.
- Add ground turkey to the pan and cook for about 10 minutes, breaking it apart until evenly browned.
- Wash large bell peppers and slice each in half lengthwise, removing seeds. Arrange in the greased baking dish, cut side up.
- Once turkey is browned, reduce heat and stir in canned tomato sauce, taco seasoning, black beans, frozen corn, and cooked rice. Mix well and simmer for 2-3 minutes.
- Spoon about ¾ cup of the turkey filling into each bell pepper half and sprinkle cheddar cheese on top.
- Place the baking dish in the preheated oven and bake uncovered for 15-20 minutes until cheese is melted.
