  • 1 cup Celery Chopped
  • 2 stalks Green Onions Chopped
  • 1 cup Shredded Cheddar Cheese
  • 1 cup Chopped Fresh Jalapeno Adjust for heat level
  • 4 slices Bacon Cooked and crumbled
For the Cilantro Lime Dressing
  • 1 cup Sour Cream
  • 1 cup Chopped Fresh Jalapeno Adjust for heat level
  • 1 cup Fresh Cilantro Chopped
  • 1 teaspoon Onion Powder
  • 1 teaspoon Garlic Salt
  • 2 tablespoons Juice of Lime About 2 limes

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C). Prepare chicken breasts for baking.
  2. Cook the chicken for 25–30 minutes until fully cooked and shred.
  3. Chop the celery, green onions, and fresh jalapenos.
  4. In a mixing bowl, combine the shredded chicken, chopped celery, green onions, jalapenos, bacon, cottage cheese, and cheddar cheese.
  5. Blend the dressing ingredients in a food processor until smooth.
  6. Pour the dressing over the salad mixture and toss to combine.
  7. Serve immediately or refrigerate for later.
