Step-by-Step Instructions
  1. Steam the cauliflower rice in a pot or microwave until tender and translucent, about 5-7 minutes. Add seasoned rice vinegar, toss, and let cool.
  2. In a small mixing bowl, combine mayonnaise, sriracha sauce, and toasted sesame oil. Whisk until smooth and creamy.
  3. Drain the canned tuna and fold it into the spicy mayonnaise until well coated.
  4. Portion 1 cup of cauliflower rice into meal prep containers and add an even layer of the spicy tuna mixture on top.
  5. Slice the cucumber and place it atop the tuna mixture. Sprinkle with sesame seeds and scallions.
  6. Cover containers and refrigerate for up to 3 days.
