- Steam the cauliflower rice in a pot or microwave until tender and translucent, about 5-7 minutes. Add seasoned rice vinegar, toss, and let cool.
- In a small mixing bowl, combine mayonnaise, sriracha sauce, and toasted sesame oil. Whisk until smooth and creamy.
- Drain the canned tuna and fold it into the spicy mayonnaise until well coated.
- Portion 1 cup of cauliflower rice into meal prep containers and add an even layer of the spicy tuna mixture on top.
- Slice the cucumber and place it atop the tuna mixture. Sprinkle with sesame seeds and scallions.
