Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the room temperature unsalted butter, sugar, and salt. Blend until well combined.
  3. Gradually mix in the all-purpose flour, finely ground coffee, and ground cardamom.
  4. Lightly flour your work surface and roll out the cookie dough to about 1/4 inch thick.
  5. Use a cookie cutter to cut out cookies from the rolled dough.
  6. Bake the cookies for about 10 minutes until lightly golden around the edges.
  7. While the cookies cool, melt the bittersweet chocolate and vegetable oil in a microwave-safe bowl.
  8. Dip half of each cookie into the melted chocolate and allow excess to drip off.
  9. Allow the chocolate to set at room temperature, or refrigerate for faster setting.
