- In a large skillet, melt 2 tablespoons of unsalted butter over medium heat for about 1 minute. Add 3 cloves of minced garlic and sauté until fragrant, about 30 seconds.
- Add 12 ounces of cleaned baby bella mushrooms to the skillet. Cook for 5–7 minutes, stirring occasionally, until golden brown and tender.
- Stir in 1 cup of halved cherry tomatoes, 2 tablespoons of tomato paste, and ½ cup of heavy cream. Let it simmer on medium-low for about 3-4 minutes.
- Add ½ cup of grated Parmesan cheese and 3 cups of fresh spinach, seasoning with kosher salt and black pepper to taste. Stir for 2–3 minutes until cheese melts and spinach wilts.
