Ingredients
  

For the Salmon
  • 4 fillets wild-caught Sockeye salmon
  • 2 tablespoons extra virgin olive oil can substitute with unsalted butter
  • to taste teaspoon sea salt adjust based on preference
For the Sauce
  • 3 cloves garlic minced
  • 2 tablespoons tomato paste preferably organic
  • 1/2 cup sun-dried tomatoes chopped
  • 1 cup organic heavy cream or coconut milk for dairy-free option
  • 1/2 cup vegetable or seafood stock or chicken stock
  • 1/4 cup white cooking wine use dry varieties
  • 2 tablespoons lemon juice freshly squeezed
  • 1 cup kale chopped
  • 1/2 cup freshly grated parmesan or dairy-free parmesan

Method
 

Steps
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Rinse the salmon fillets and pat them dry. Drizzle with olive oil and sprinkle with seasoning.
  3. Roast the salmon for 15 to 20 minutes, until it flakes easily with a fork.
  4. Heat a skillet over medium heat and add olive oil. Sauté garlic until fragrant.
  5. Add tomato paste and sun-dried tomatoes, then stir in cream, stock, lemon juice, and wine. Simmer.
  6. Add parmesan and kale to the sauce, stirring until melted and thickened.
  7. Combine roasted salmon with sauce and simmer briefly. Serve hot.
