Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet over medium-high heat, add lean ground beef and finely chopped onion. Cook for about 5-6 minutes until browned and onion is translucent. Drain excess fat.
  3. Stir in taco seasoning until meat is well coated, cook for another minute to let the spices bloom.
  4. Add drained black beans, corn, and salsa to the skillet. Mix thoroughly and allow to cook for an additional 2-3 minutes.
  5. Transfer the beef mixture into a 2-quart baking dish, spreading it evenly. Sprinkle crushed tortilla chips and shredded cheddar cheese on top.
  6. Bake in the preheated oven for 10-15 minutes until cheese is melted and lightly golden.
  7. Remove from oven, let cool, and add toppings like sour cream, diced tomatoes, or jalapeños before serving warm.
