Step-by-Step Instructions
  1. In a small saucepan, combine 1/2 cup of sugar and 1/2 cup of water along with 4 sprigs of fresh thyme. Bring to a gentle simmer for about 5 minutes until the sugar dissolves. Remove from heat, cool, and strain out thyme leaves.
  2. Squeeze the juice from one fresh lemon until you obtain about 1 ounce, straining it well. Set aside.
  3. In a cocktail shaker, add 2 tablespoons of smooth fig jam, 2 ounces of gin, the freshly strained lemon juice, and 1 ounce of thyme syrup. Fill with ice and shake vigorously for about 10-15 seconds.
  4. Strain the mixture into a glass filled with ice, filling it to just below the rim.
  5. Top with 3 ounces of sparkling water just before serving.
  6. Garnish with a fresh sprig of thyme and a fig slice.
