- Preheat your oven to 350°F (175°C) and prepare a loaf pan by lining it with parchment paper or greasing it with butter or oil.
- In a large mixing bowl, whisk together the eggs, Greek yogurt, and melted butter or coconut oil until the mixture is smooth and creamy.
- Add baking powder, salt, xanthan gum or psyllium husk powder, and almond flour (if using) to the wet mixture and stir until well-combined.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
