For the Chicken
  • 4 pieces Chicken Breasts Pounded to even thickness
  • 2 Tbsp Olive Oil Can substitute with avocado oil
  • 4 Tbsp Lime Juice Fresh is preferred
  • 2 tsp Lime Zest Fresh recommended
  • 1 Tbsp Chili Powder Adjust based on heat preference
  • 1 Tbsp Brown Sugar Can substitute with honey or coconut sugar
  • 1 tsp Salt Essential for flavor
  • 1 tsp Ground Cumin Can be replaced or omitted
  • 1 tsp Smoked Paprika Regular paprika can be used
  • 1 tsp Onion Powder Fresh garlic and onion recommended
  • 1 tsp Garlic Powder Fresh garlic preferable
  • 1 tsp Chipotle Chili Powder Optional for milder flavor
  • 1 tsp Pepper Enhances flavor
For the Avocado Corn Salsa
  • 2 pieces Avocados Ripe but firm
  • 1 cup Cherry Tomatoes Can substitute with Roma tomatoes
  • 1 cup Fresh Corn Canned corn can be substituted
  • 1/2 cup Red Onion Substitute with green onions if desired
  • 1 piece Red Bell Pepper Adjust according to preference
  • 1 piece Jalapeno Pepper Use based on heat preference
  • 1/4 cup Cilantro Can replace with parsley
  • 2 cloves Garlic Minced preferred

Method
 

Directions
  1. In a medium bowl, whisk together olive oil, lime juice, lime zest, chili powder, brown sugar, salt, ground cumin, smoked paprika, onion powder, garlic powder, and black pepper.
  2. Place the pounded chicken breasts in a large resealable plastic bag or shallow dish, pour the marinade over the chicken, and marinate for 15-30 minutes.
  3. Heat a non-stick skillet over medium-high heat and add the marinated chicken. Cook undisturbed for 3-5 minutes until golden-brown, then flip and cover, cooking for an additional 5-7 minutes.
  4. Remove from heat and let the chicken rest for about 5 minutes before slicing.
  5. In a large bowl, combine diced tomatoes, fresh corn, red onion, red bell pepper, jalapeno, and cilantro for the salsa.
  6. Fold in diced avocados just before serving.
  7. Serve sliced chicken alongside the Avocado Corn Salsa.
