- Wash and dry fresh organic lemons. Zest and juice them, removing seeds for about 1 cup of lemon juice.
- In a medium saucepan, combine lemon juice, zest, granulated sugar, and water. Stir until sugar dissolves.
- Bring the mixture to a boil over medium heat, stir continuously, then reduce heat and simmer for 30-40 minutes until thick.
- Perform the cold plate test: place a spoonful on a chilled plate; if it wrinkles, it's ready. If not, cook longer.
