Step-by-Step Instructions for Lemon Spread
  1. Wash and dry fresh organic lemons. Zest and juice them, removing seeds for about 1 cup of lemon juice.
  2. In a medium saucepan, combine lemon juice, zest, granulated sugar, and water. Stir until sugar dissolves.
  3. Bring the mixture to a boil over medium heat, stir continuously, then reduce heat and simmer for 30-40 minutes until thick.
  4. Perform the cold plate test: place a spoonful on a chilled plate; if it wrinkles, it's ready. If not, cook longer.
  5. Allow to cool for 10 minutes, then pour into sterilized jars and seal tightly. Cool completely before refrigerating.
