  • 1 cup Cherry tomatoes Halved
  • 2 cups Baby spinach Chopped
For Freshness
  • 1/4 cup Fresh parsley Chopped
  • 1/4 cup Fresh dill Optional; substitute with basil or mint
  • 1 cup Feta cheese Crumbled; soft goat cheese works too
  • 2 tablespoons Capers Rinsed; optional

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine shrimp with olive oil, salt, pepper, oregano, paprika, and lemon zest.
  3. Spread the shrimp onto the prepared baking sheet in a single layer.
  4. Roast shrimp in the oven for 8-10 minutes until they are opaque.
  5. Boil salted water in a large pot and cook orzo for about 8-10 minutes until al dente.
  6. Drain orzo and return it to the pot; add olive oil, lemon juice, grated garlic, and red pepper flakes.
  7. Fold in cherry tomatoes, baby spinach, parsley, and dill.
  8. Gently mix in feta cheese and optional capers.
  9. Serve by topping the orzo with roasted shrimp, garnished with extra herbs and lemon wedges.
