Step-by-Step Instructions
  1. In a stand mixer bowl, combine warm water, instant yeast, molasses, cocoa powder, vegetable oil, and honey. Mix until blended, then add whole wheat flour and stir until just combined.
  2. Gradually add bread flour while mixing on medium speed until the dough starts pulling away from the sides of the bowl. Knead for about 5-7 minutes until soft and slightly tacky.
  3. Transfer the kneaded dough to a greased bowl. Cover and let it rise in a warm place for about 1 to 2 hours until doubled in size.
  4. Punch the risen dough down, divide it into two or three pieces, shape into loaves, and place on parchment-lined baking sheets. Cover and allow to rise for 45-60 minutes.
  5. Preheat your oven to 375°F. Bake the loaves for approximately 25 minutes until the tops are golden brown.
  6. Remove from oven, brush with melted salted butter, and sprinkle oats on top. Return to oven for 5-7 minutes.
  7. Cool on a wire rack for at least 30 minutes before slicing.
