- Preheat your oven to 400°F (200°C).
- Wash the baby potatoes and slice them in halves or quarters. Place them in a baking dish.
- Add halved cherry tomatoes, minced garlic, and drizzle olive oil over them. Toss with dried oregano, black pepper, and a pinch of salt.
- Nestle the feta cheese block in the center and drizzle extra olive oil over it.
- Bake in the oven for 35–40 minutes, stirring halfway through.
- Once baked, remove and stir in the feta to create a creamy sauce.
- Serve warm, garnished with fresh basil or parsley.
