  • 1 cup Cherry Tomatoes Grape tomatoes work as a substitute
  • 3 cloves Garlic Minced
For the Feta Mixture
  • 8 oz Feta Cheese Firm block-style
  • 3 tablespoons Olive Oil Or avocado oil
  • 1 teaspoon Dried Oregano Or Italian seasoning
  • 1 pinch Black Pepper Adjust to taste
  • 1 teaspoon Salt Use sparingly
For Garnishing
  • 1 handful Fresh Basil or Parsley Optional but recommended

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Wash the baby potatoes and slice them in halves or quarters. Place them in a baking dish.
  3. Add halved cherry tomatoes, minced garlic, and drizzle olive oil over them. Toss with dried oregano, black pepper, and a pinch of salt.
  4. Nestle the feta cheese block in the center and drizzle extra olive oil over it.
  5. Bake in the oven for 35–40 minutes, stirring halfway through.
  6. Once baked, remove and stir in the feta to create a creamy sauce.
  7. Serve warm, garnished with fresh basil or parsley.
