Step‑by‑Step Instructions
- In a deep saucepan, combine 2 tablespoons of green tea leaves, 1/4 teaspoon of baking soda, and 2 cups of cold water. Bring to a gentle boil over medium heat for about 5 minutes.
- Once boiling, reduce the heat to low and simmer the tea for approximately 10-15 minutes until the liquid reduces by half.
- Remove the saucepan from heat and add 2 cups of ice-cold water. Whisk vigorously for about 2 minutes to aerate the tea.
- Crush a few cardamom pods and add them to the aerated mixture. Return to low heat and simmer for another 5 minutes.
- Carefully strain the tea concentrate into a clean pot using a fine mesh strainer.
- Gradually add 2 cups of warm whole milk while whisking vigorously to achieve a uniform blend.
- Season with salt or sugar according to your preference and let it simmer gently for 2 minutes.
- Pour the warm Kashmiri Chai into cups and garnish with crushed pistachios, almonds, or dried rose petals before serving.

Notes
Use fresh green tea leaves for the best flavor and to achieve the signature pink color. Adjust salt or sugar to personal preference.
