Step‑by‑Step Instructions
  1. In a deep saucepan, combine 2 tablespoons of green tea leaves, 1/4 teaspoon of baking soda, and 2 cups of cold water. Bring to a gentle boil over medium heat for about 5 minutes.
  2. Once boiling, reduce the heat to low and simmer the tea for approximately 10-15 minutes until the liquid reduces by half.
  3. Remove the saucepan from heat and add 2 cups of ice-cold water. Whisk vigorously for about 2 minutes to aerate the tea.
  4. Crush a few cardamom pods and add them to the aerated mixture. Return to low heat and simmer for another 5 minutes.
  5. Carefully strain the tea concentrate into a clean pot using a fine mesh strainer.
  6. Gradually add 2 cups of warm whole milk while whisking vigorously to achieve a uniform blend.
  7. Season with salt or sugar according to your preference and let it simmer gently for 2 minutes.
  8. Pour the warm Kashmiri Chai into cups and garnish with crushed pistachios, almonds, or dried rose petals before serving.
