For the Bowl Base
  • 2 cups Cooked Rice White or brown.
  • 1 can Black Beans Rinse to reduce sodium content.
  • 1 cup Corn Fresh, frozen, or canned.
For the Veggies
  • 1 cup Cherry Tomatoes, Halved Diced red bell pepper can be used.
  • 1 Avocado Sliced Sour cream or Greek yogurt can be substitutes.
  • 1/2 cup Red Onion, Diced Green onions can substitute.
For the Finish
  • 1/4 cup Feta Cheese, Crumbled Optional.
  • 1/4 cup Extra Cilantro for Garnish
  • 2 wedges Lime Wedges for Serving

Method
 

Step-by-Step Instructions
  1. Marinate the steak by whisking together lime juice, olive oil, cilantro, garlic, cumin, chili powder, salt, and black pepper. Add flank steak, coat well, and marinate for at least 30 minutes.
  2. While marinating, cook rice according to package directions and rinse black beans. Prepare for assembly.
  3. Preheat grill or skillet over medium-high heat. Grill steak for about 5-7 minutes per side until desired doneness. Let rest for 5 minutes before slicing.
  4. Assemble bowls with cooked rice, sliced steak, black beans, corn, tomatoes, avocado, onion, and feta if desired.
  5. Garnish with cilantro and serve with lime wedges.
