- Begin by cleaning and slicing 1-2 leeks and chopping about 8 ounces of mushrooms. Set aside.
- In a large skillet, melt 2 tablespoons of butter over medium heat, add the sliced leeks, and sauté for about 10 minutes until caramelized.
- Add the chopped mushrooms to the skillet and cook for an additional 5-7 minutes until tender and browned.
- Stir in the cooked pasta, then add 1 cup of heavy cream and 1 to 1.5 cups of grated Gruyere cheese. Stir over medium heat for about 5 minutes until cheese melts.
