  • 1/2 cup Chopped Pecans or Walnuts Almonds can also be used
  • 4 cups Salad Greens Use kale, arugula, or a mix for variety
  • 1/2 cup Feta Cheese or Gorgonzola Omit for dairy-free or substitute with goat cheese
For the Dressing
  • 1/4 cup Olive Oil Healthy fat base
  • 2 tablespoons Balsamic Vinegar Apple cider vinegar can be used instead
  • 1 tablespoon Honey or Maple Syrup Use maple syrup for vegan option
  • 1/2 teaspoon Garlic Powder
  • to taste Black Pepper
  • to taste Salt

Method
 

Preparation
  1. In a large salad bowl, add salad greens, pomegranate seeds, and sliced Honey Crisp apples.
  2. Sprinkle chopped pecans or walnuts and crumble feta cheese or Gorgonzola on top.
  3. In a glass jar, combine olive oil, balsamic vinegar, honey or maple syrup, garlic powder, salt, and black pepper. Shake to blend.
  4. Drizzle dressing over the salad and toss gently to coat all ingredients.
  5. Serve immediately on a platter or individual bowls.
